What happens when delicate French pastries meet the bold green magic of Japanese matcha?
You get elegance, comfort…and a nice blend of two rich cultures.
So today, let’s dive into three French classics that got a dreamy extra matcha.
Super easy, très chic, and absolutely delicious
1. Matcha French Toast
French toast (or pain perdu) is already a cozy weekend favorite, but this version? It's the next level.
Fluffy inside, crispy outside, and when mixed with matcha; it’s warm, comforting, and a perfect breakfast to start your day.
What you need (for 2 servings):

4 slices of bread
-
2 eggs
-
100 ml milk (oat milk works great too!)
-
1 tbsp sugar
-
1 tsp YEDOENSIS Premium Matcha
-
Butter for the pan
-
Maple syrup, fruits, or anko paste for topping
Whisk eggs, milk, sugar, and matcha together until smooth.
Dip the bread slices in the mixture (a few seconds on each side), then fry them in butter until golden.
Top with your favorite things~ we love scoop of ice-cream and a spoon of anko!
Little tip: Sift the matcha before adding it in the batter, it blends better that way.
2. Matcha Crème Brûlée
You know crème brûlée: that creamy vanilla custard with a burnt sugar top you crack with a spoon. Now imagine it with matcha, creating just the right amount of sweetness and umami.
What you need (for 4 servings):

4 egg yolks
-
40 g sugar
-
300 ml heavy cream
-
1 tsp YEDOENSIS Premium Matcha

Brown sugar (for the crispy top!)
Warm up the cream in a saucepan (not boiling). In another bowl, mix egg yolks, sugar, and sifted matcha.
Slowly pour the cream into the bowl while whisking, then strain the mixture.
Pour into ramekins and bake in a water bath at 150°C for 30–35 minutes.
Chill for 2 hours.
Right before serving, sprinkle brown sugar and torch it until it caramelizes.
So satisfying to crack. So elegant to serve.
3. Matcha & Anko Macaron
French macarons already look like little jewels, but when filled with matcha ganache and sweet red bean paste it takes it to a whole new level!
What you need (for about 10 macarons):
For the shells:

100 g powdered sugar
-
100 g almond flour
-
2 egg whites
-
40 g sugar
-
Green food coloring (optional)
For the filling:
-
100 g white chocolate
-
50 ml cream
-
1 tsp YEDOENSIS Premium Matcha
-
2 tbsp anko
Prepare your macaron shells.
For the filling, heat the cream and pour it over chopped white chocolate + sifted matcha. Mix until smooth then let it chill.
Once cooled, pipe some matcha ganache and a tiny bit of anko inside each macaron.
Let rest overnight for the best texture.
4. Matcha Madeleines
Small, shell-shaped, and buttery soft; madeleines are the perfect little tea-time treat.
And when you add matcha? You get an elegant, slightly bitter note that balances the sweetness beautifully.
Perfect with a cup of hojicha, genmaicha…or double the matcha goodness with a cold matcha latte!
What you need (for about 12 madeleines):

2 eggs

80 g sugar
-
100 g flour
-
1 tsp baking powder
-
1 tbsp YEDOENSIS Somei Yoshino

100 g melted butter (unsalted)

Optional: white chocolate to dip
In a bowl, whisk the eggs and sugar until light and fluffy.
Sift in flour, matcha, and baking powder. Mix gently.
Add the melted butter and stir until smooth.
Chill the batter for at least 1 hour (this helps them rise with that cute little bump!).
Preheat oven to 200°C.
Butter your madeleine molds and fill them ¾ of the way.
Bake 10–12 minutes until the edges are golden.
Optional (but adorable): dip half of each madeleine in white chocolate and sprinkle a bit of matcha on top
