How Matcha is made

Shade Growing

Matcha is made from shade-grown tea leaves, typically from the Camellia sinensis plant. The plants are shaded for about three weeks before harvest to increase chlorophyll production and amino acid content.

Steaming and drying

The harvested leaves are steamed to prevent oxidation, then dried. The leaves are then deveined and destemmed to produce what is known as tencha.

Grinding

The dried tencha leaves are stone-ground into a fine powder, resulting in the vibrant green matcha powder, which is then sifted and packaged for sale.

How Hojicha is made

Harvesting and Steaming

Hojicha is typically made from mature tea leaves, stems, and twigs of the Camellia sinensis plant. The leaves are first harvested and then steamed to prevent oxidation, preserving the green color and fresh flavor of the tea.

Rolling and Drying

After steaming, the tea leaves are rolled and dried. This process shapes the leaves and removes excess moisture, preparing them for the roasting stage. The rolling helps to break down the cell walls in the leaves, releasing their natural juices and enhancing flavor.

Roasting

The dried tea leaves are then roasted at high temperatures. This roasting process is what gives Hojicha its distinct, smoky, and nutty flavor profile. The high heat transforms the leaves from green to brown, reducing their caffeine content and making the tea smooth and less astringent.

Processing the Tea Leaves

Brown rice is soaked, steamed, and then roasted until it turns golden brown, with some grains popping like popcorn. This roasted rice is then blended with the dried green tea leaves, creating Genmaicha’s distinctive nutty and toasty flavor profile.
