FAQ
1. What water temperature should I use? We recommend water around 70 to 80°C (158 to 176°F). Boiling water can scorch the matcha and bring out bitterness, while slightly cooler water preserves its natural sweetness and umami. Simply let boiled water sit for a minute or two before pouring, then whisk with the chasen until frothy.
2. Why is the chasen made of resin instead of bamboo? We chose resin to make daily matcha preparation easier. It keeps the traditional shape and whisking performance of a bamboo chasen, but it won't split, fray, or mold over time, and it rinses clean in seconds.
3. How do I use each tool? Scoop your matcha with the chashaku, sift it through the chakoshi to remove clumps, add hot water, and whisk briskly with the chasen in a "W" motion until a fine froth forms. The wide chawan gives you plenty of room to whisk comfortably, and the chakin is used to wipe the bow and preparation areal clean.
4. How should I care for the tools? Rinse the chasen and chawan with warm water immediately after use. While soap is typically not used for chasen, this resin one can be washed with soap. Rest the chasen on its holder to dry so it keeps its shape. The chakoshi and chashaku simply need a quick rinse and dry, and the chakin can be hand-washed and air-dried.
